Background: Improving and strengthening health efforts, namely securing food and beverages to protect the public from food and beverages that do not meet quality requirements. Food stall traders in processing food must pay attention to aspects of health and sanitation hygiene. there are 16 out of 48 food stall traders on Persatuan Street, Sleman Regency who do not wash their hands, both before and after serving buyers, traders serving customers still smoke, traders directly use their hands when taking ice cubes without using equipment, with these conditions it can be risky transmission of various diseases. The traders also still have less knowledge about sanitation hygiene. Objective: To find out the description of sanitation hygiene which includes environmental sanitation facilities, equipment, and personal hygiene at food stalls on Unity Street, Sleman Regency in 2023. Method: This research method is a descriptive study with an observational approach. The research instrument used a modified checklist from the Mlati 1 Sleman Health Center. The samples taken in this study were a total sample of 48 food stalls. Results: Results of the research conducted There were 18 (42%) stalls that did not meet the requirements for environmental sanitation facilities, 12 (29%) stalls did not meet the sanitation requirements for equipment, and 9 (20%) stalls did not meet the personal hygiene requirements for Sanitation of the Street food stalls. Conclusion: 23 (48%) of the food stalls did not meet the requirements and 25 (52%) of the lesehan stalls met the requirements.
